
The only ‘I’ vegetable I could identify, apart from some obscure and exotic things. Came across this use somewhere on the web as a meat dish – I’m sure it would be very tasty with a bit of chicken, pheasant or other meat. My version has the lettuce well chopped up and mixed with slices of mozzarella, tomato and cucumber, utilising a dollop of mayonnaise to hold thing together. The wrap was a freshly pan-baked Tesco ultra-cheap flatbread. Made two and found it a pleasant and surprisingly filling meal.
